Madre Tierra was the first vegetarian restaurant in Toledo, and we are still in the same place: Bajada de la Tripería 2, a two-minute walk from the Cathedral, in the heart of the old town. Seasonal, market-led cooking with organic produce, and clearly marked vegan and gluten-free options in a city where nearly everything else comes with meat.

How to find us on foot
From Plaza de Zocodover
Walk down Calle Comercio towards the Cathedral and turn into Bajada de la Tripería before you reach it. About five minutes, downhill all the way.
From the train or bus station
Take the public outdoor escalators at Safont or Recaredo up into the old town — they save you the steepest climb. From the top it is roughly a fifteen-minute walk.
If you are driving
The old town has restricted vehicle access. The practical option is to park at Safont or Miradero and walk up, or use the escalators.
What we cook
The menu is vegetarian throughout, with vegan and gluten-free dishes marked. It is not a salad bar: expect pizza, burgers, rice dishes, fresh pasta, vegetable sushi and Spanish classics rebuilt without meat.

Toledo classics, without the meat
Our vegan carcamusas are the dish visitors talk about most. Carcamusas are the Toledo dish — a meat stew with tomato, peppers and peas, served in a clay dish with bread. We were, as far as we know, the first in the city to put a vegan version on the menu. It keeps the slow sofrito, the pepper, the peas and the chilli kick; only the meat is gone.
Pizza, burgers and sushi
Four vegetarian pizzas with house tomato sauce, two burgers (one of them fully vegan, made with pea protein), and vegetable sushi rolls. See the menu in English.

Frequently asked questions
Is there a vegetarian restaurant in Toledo old town?
Yes. Madre Tierra, at Bajada de la Tripería 2, two minutes from the Cathedral. It was the first vegetarian restaurant to open in the city.
Do you have an English menu?
Yes. You can read the menu in English before you come, and we hand it to you at the table.
Do you have vegan and gluten-free options?
Yes, and they are marked on the menu. If you are coeliac, please tell us when you book rather than when you sit down — it gives the kitchen time to organise the service properly. We are a vegetarian kitchen, not a certified gluten-free one, and we would rather you knew that in advance.
What time do people eat lunch in Spain?
Lunch service runs from 1:00pm to 4:00pm, with most locals sitting down around 2:00pm. Dinner starts at 8:30pm at the earliest. Outside those windows, options in the old town are limited.
Do I need to book?
On weekdays and off season, usually not. At weekends, on Spanish public holidays, during Holy Week or Corpus Christi, yes — the dining room is small and fills up on the first sitting.
I am not vegetarian. Will I enjoy it?
Most people who come along reluctantly with a friend end up ordering seconds. There is pizza, there are burgers, there is sushi and there is a proper Toledo stew. Nothing on the menu is asking you to change your diet.
Are you close to Toledo Cathedral?
Two minutes on foot. We are on one of the streets running down from the Cathedral area towards the river Tajo.
